Grandma's Ginger Cake
- 225g (8oz) wholemeal flour
- ½ tspn bicarbonate of soda
- 1 egg
- 100g (4oz) butter
- 100g (4oz) dark brown sugar
- 4 tblspns black treacle or molasses
- 2 tblspns milk
- 2 tspns ground ginger
Mix together the flour, bicarbonate of soda and ginger.
Melt butter in a saucepan with sugar and treacle. Cool slightly, then beat in the milk and egg.
Stir the liquid ingredients into the flour. Beat well, then turn into a greased and lined loaf tin. Bake in the oven at 180degC (350degF) for 40-45 minutes, until it risees and is firm to touch. Cool on a wire rack. Ice with lemon icing or use as a loaf.
